RESEARCH EXPERIENCE

2004-present. Virginia Tech. Pilot data collection for research proposal to determine relationships between breakfast habits and body mass index in college students (n~250 students) using 7-day food records and measured height/weight.

2000-2001. Western Carolina University. WCU Summer Research Grant. Collected pilot data on diet and physical activity habits of WCU students and local high school students. Validated nutrition and physical activity survey to be submitted as part of a grant proposal to National Cancer Institute.

1997-1998. Western Carolina University. Evaluator for a 5-A-Day intervention project targeted to ninth-grade high school students: served as academic consultant; measured intake of fruits and vegetables, knowledge and attitudes regarding fruit and vegetable intake via individual surveys and focus groups.

1994-1996. University of Arkansas for Medical Sciences. Community nutrition education: USDA-funded project designed to improve nutrition knowledge, attitudes and behavior of elementary school children, their parents and school staff in a small Arkansas Delta town through multiple consistent nutrition messages delivered via USDA food assistance programs; extensive evaluation plan developed with technical assistance provided through USDA.

1992-1996. University of Arkansas for Medical Sciences. Dietary intake and nutrition knowledge and attitudes of fifth graders: Conducted pilot studies using multiple 24-hour recalls to collect baseline data on dietary intake of children in Arkansas.

1988-1992. Purdue University. Metabolic Studies: Conducted two 2-month human metabolic studies at University of Wisconsin-Madison to examine physiological effects of wheat bran and oat bran. Responsibilities included: interviewing and screening potential subjects, computer analysis of 3-day food records, designing metabolic diets, formulating recipes to incorporate bran into diet items, preparing all homemade diet items, supervising foodservice workers, supervising subjects at 3 meals/day. Laboratory experience: 24-hour urine creatinine analysis, fecal bile acid and neutral steroid analysis involving extraction, thin-layer chromatography and gas chromatography.

1985-1988, Purdue University. Conducted four 1-month rat feeding studies: one study on the modification of bile acid excretion by corn bran, wheat bran, barley bran and bamboo shoots; 3 additional studies on effect of bamboo shoots on serum cholesterol levels and bile acid excretion (pair-feeding and dose-response). Measured feed efficiency, serum albumin, serum cholesterol, liver cholesterol, fecal bile acids and neutral steroids.

April, 2002 - WCU Summer Research Fellowship - $1,500: support to develop research proposal to be submitted to federal funding agency.

July, 2000 - WCU Summer Research Grant - $5,000: Use of a Mentor Program Between Western Carolina University Students and Local High School Students to Decrease Cancer Risk via Improved Health Habits: Mentor selection strategy and instrument validity.

Established two $10,000 departmental graduate assistantships by soliciting funds from the Arkansas Department of Health WIC Program, two local residential facilities for substance abusing women (Arkansas Cares' Saving Station II and the Women and Children Recovery Center), and the University of Arkansas Cooperative Extension Service: graduate assistants provided nutrition services to these organizations through memoranda of agreement with the University of Arkansas for Medical Sciences; 1994-1996.
